Chocolate Chip Cookie Pancakes are Baked!
These are so easy because they’re baked pretty much like actual cookies and it takes just 25 minutes. Plus, there’s so much less room for error. Maybe it’s just me, but pancakes are difficult to get just right consistently.
These pancakes use simple ingredients including gluten-free flour, brown sugar, applesauce and flax to replace the egg. Vegan chocolate chips are folded just before baking.
Spread them out in about six-inch rounds on a greased or buttered baking sheet.
Bake the pancakes for about 20-25 minutes, until lightly browned. Or browned to your liking. I probably let these get a little too dark but that was what I preferred.

Ingredients
Wet Ingredients
- 1/2 cup brown sugar loosely packed
- 1/3 cup oil or melted vegan butter
- 1 tablespoon vanilla extract
- 1 teaspoon vinegar
- 2 teaspoons ground flaxseed or ground chia
- 1/3 cup plant-based milk
Dry Ingredients
- 1 cup Gluten-Free All-Purpose Baking Flour Mix
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Stir In
- 1/2 cup vegan chocolate chips
Instructions

Preheat oven to 350 degrees F and lightly grease or butter a baking sheet.

In a large bowl, mix together the wet ingredients until creamy.

In a medium bowl, sift together the dry ingredients.

Stir the dry ingredients into the wet ingredients and mix until well incorporated.

Gently fold in the chocolate chips.

For each pancake, spoon out about 1/4 cup of batter onto the cookie sheet and spread into approximately a 6 inch circle.

Bake at 350 degrees F for 20 to 25 minutes or until just lightly browning.

Serve with chocolate syrup, a mix of chocolate syrup and maple syrup, and a dusting of powdered sugar.
