Chocolate Chip Cookie Pancakes are Baked!
These are so easy because they’re baked pretty much like actual cookies and it takes just 25 minutes. Plus, there’s so much less room for error. Maybe it’s just me, but pancakes are difficult to get just right consistently.
These pancakes use simple ingredients including gluten-free flour, brown sugar, applesauce and flax to replace the egg. Vegan chocolate chips are folded just before baking.
Spread them out in about six-inch rounds on a greased or buttered baking sheet.
Bake the pancakes for about 20-25 minutes, until lightly browned. Or browned to your liking. I probably let these get a little too dark but that was what I preferred.
I mixed up equal parts vegan chocolate syrup and maple syrup for a super sweet drizzle. It was delicious but not all that pretty …
So we gave them a sprinkle of powdered sugar. Perfect.
