Mug cakes are so easy to make and take just minutes. That’s both good and bad, of course! Either way, having access to freshly made cake in just minutes is deliciously convenient. The peanut butter with chocolate chips has become our favorite. We even featured it on the back of the Christmas cards we sent out this year.
Peanut Butter and Chocolate Mug Cake is So Quick and Easy!
This recipe is just as easy as that Christmas card says. Basically, just stir together a few simple ingredients and microwave. Bam. Done. Hot, gooey, tasty, yummy cake.
This is a recipe meant to be large enough for two people to share, so it’s generously sized. It will fit nicely in a soup mug!
Start with the dry ingredients. I used Bob’s Red Mill 1 to 1 Gluten Free Flour, which is pretty good for general baking including this, but I also regularly use Otto’s Cassava Flour and love it, too. I used crunchy peanut butter but any kind will do. Apple sauce helps it all stick together, although that’s not so important since it’s all in a mug.
Any plant-based milk will work well here. My favorite for just about everything is So Delicious Unsweetened Coconut Milk.
Chocolate chips or any chopped chocolate works here. I usually use vegan chocolate chips but … well, I ate them. They were right there in the cupboard just … sitting there. So, anyway, we used some chopped chocolate for this one. But if you have chocolate chips just sitting around and have left them alone, they work great here.
Stir it all together, and then I like to add a few more chocolate chips or chunks on top. Simply microwave for about 2 minutes. The center will still be a little gooey, but that’s fine.

Ingredients
- 1/2 cup gluten-free flour
- 1/2 cup sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup applesauce
- 6 tablespoons peanut butter
- 1/4 teaspoon vanilla extract
- 1/2 cup plant-based milk
- 1/4 cup vegan chocolate chips
Instructions

In a large soup-sized mug at least 16 oz, add the flour, sugar, baking soda, baking powder, and salt and stir to combine.

Add the applesauce, peanut butter, vanilla, and plant-based milk and stir well to combine.

Gently fold in the chocolate chips or chopped chocolate. Save a few chips to add to the top.

Microwave for two minutes. The majority of the mug cake will be firm and cakey and the very center may be slightly gooey. If it's not firm and cakey after 2 minutes, continue microwaving at 30-second intervals until it's the right state of doneness.
