One of my favorite soups was always Campbell’s classic tomato soup.

I remember it being a perfect, creamy blend of tomato and cheesiness. It was so delicious with a grilled cheese sandwich to dip!

After going gluten-free in 2012, I was disappointed that Campbell’s tomato soup was off the menu. It has wheat flour in it!

But it is so easy and so simple to just make your own! It’s just a few ingredients — such as crushed, whole, diced, or stewed tomatoes — that most of us have in our pantries already! And please do use whichever kind of canned tomato you have on hand. It’s not rocket science. It all tastes delicious when it’s mixed up together.

Here’s the recipe for the soup. I used Daiya Provolone Cheese Slices for a grilled cheese to dip! I’ll have a vegan, gluten-free sandwich bread recipe for you soon!

Vegan GF Tomato Soup (Better Than Campbell's)

This Vegan Tomato Soup recipe is smooth, rich, tomatoey, with just the right amount of tomatoey sweetness. It's also super easy to make with commonly found pantry items.

Ingredients

  • 14.5 oz can of crushed tomatoes or stewed, diced, or whole tomatoes
  • 1 cup unsweetened plant-based milk I use So Delicious Unsweetened Coconut Milk
  • 1 cup water
  • 3 tbsp tomato paste
  • 1 tsp nutritional yeast
  • 1 tbsp rice flour or other GF flour
  • 1 tbsp sugar
  • 1 tbsp oil optional ... can omit if you like!
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper
  • pinch celery seed just omit if you don't have it!

Instructions

  1. Place all ingredients into a high-speed blender and puree until very smooth, about one minute.

  2. Pour into saucepan and heat through until hot.

  3. Serve piping hot alone or with vegan grilled cheese or with crackers or chips.

  4. Makes about four 1 cup servings.

    I’m going to try this in my VitaMix as a blend-only hot soup! Just change the instruction for “blend for 1 minute” to “blend for 6-8 minutes”, and that should do it! Will try and report back. Are you familiar with Dr. Caldwell B. Esselstyn, of “Prevent and Reverse Heart Disease” fame? (http://www.dresselstyn.com/site/books/prevent-reverse/about-the-book/) I follow his program, Whole Food, Plant Based, No Oil (WFPBNO) and your recipes are right on the money! Only minor or no adaptations to fit his program. Loved your Pad Thai soup. Also, my GF has a wheat allergy, so the fact your recipes are generally gluten-free is awesome!!
