I love Pad Thai and all the possible variations of it. Pad Thai is a popular Thai dish of fried noodles. It’s usually just a bit spicy.

The noodles in pad thai are made of rice so are naturally gluten-free!I like mine kind of heavy on the peanut flavor. So I added some peanut butter in this recipe along with a little bit of coconut milk. It makes it creamy delicious.

Note: Please substitute where you like, want, or need to. ANY recipe on Planted365 can be adjusted to fit what you have to work with. For this recipe, don’t have coconut milk? Omit or use a regular plant-based milk (as long as it’s unsweetened). No lime juice? Use lemon. And so on. Use what you have.

Ingredients

  • 2 tbsp oil for cooking, optional
  • 12 oz extra firm tofu, in 1/2 inch cubes pressed, if desired
  • 1/2 cup sliced onions
  • 1 cup thinly sliced carrots
  • 1 cup sliced mushrooms canned work well here
  • 4 cups vegetable broth
  • 1/4 cup lime juice
  • 2 tsp powdered ginger
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tbsp soy sauce
  • 1/4 cup coconut milk regular full fat or reduced-fat
  • 1/4 cup peanut butter
  • 1 tbsp miso paste
  • 2 tbsp dried cilantro
  • 1/2 tsp crushed red pepper flakes or more, as desired
  • 2 cups spinach loosely packed
  • 2-4 cups additional water
  • 1/2 tsp black pepper or to taste
  • salt to taste
  • 8 oz pad thai rice noodles
  • 2/3 cup bean sprouts

Instructions

  1. In a large, heavy-bottomed soup pot, saute the tofu, carrots, onions, and mushrooms, until they're softened and slightly browned.

  2. Add the remaining ingredients except for the rice noodles and bean sprouts and simmer for about 20 minutes. Add more water as necessary for the desired amount of broth.

  3. Add the rice noodles and let simmer for an additional 6 minutes or until noodles are softened. Add bean sprouts last and let sit for a minute or two to get warm.

  4. Serve with a squirt of lime juice, additional pepper and red pepper flakes, and a drizzle of additional coconut milk, if desired.
