Vegan Cheeseburger Mac and Cheese Recipe
Vegan Cheeseburger Mac and Cheese is the perfect go-to dish when you’re craving a delicious, gooey, creamy, cheesy bowl of vegan comfort food. It’s like a cheeseburger and a bowl of mac and cheese but even more delicious together.
After a long day, I was craving comfort food and what’s more comfort food than cheesy noodles? This was perfect and it didn’t take much time at all to throw together.
There are a couple of different ways to go as far as the meat crumbles part. You can make your own meat crumbles using my recipe linked here:
Another timesaving option is to just use commercial vegan meat crumbles. One that I use fairly often is Gardein’s Meat Crumbles. They’re gluten-free and available at most grocery stores.
Yeah, It’s Vegan, But Is It Gluten-Free?
Use whatever pasta you like. I used a gluten-free elbow macaroni and it was great. Brown rice pasta would be good as would a spinach one or any other, really.
A handful of Daiya cheese on top was awesome, but use your own favorite cheese shreds. It’s also delicious and almost fat-free without the added cheese.
Toppings for your Vegan Cheeseburger Mac and Cheese
Some Bac-O-Bits, which are accidentally vegan, and chopped bread and butter pickles on the top were oh so tasty. Just a tiny bit of mustard and ketchup was good, too.
Vegan Cheeseburger Mac and Cheese
Vegan Cheeseburger Mac and Cheese is the perfect go-to dish when you're craving a tasty, gooey, creamy, cheesy bowl of vegan comfort food. Simple, easy, delicious.
- 8 oz elbow macaroni, gluten-free if desired cooked according to package directions
- oil for cooking optional
- 2 cups vegan meat substitute homemade or store-bought
- 1/2 cup diced onion
- 15 oz canned diced tomatoes
- 1 tsp salt
- 1 tsp pepper
- 2 cups chopped, cooked potatoes can use canned
- 1 cup chopped, cooked carrots can use canned
- 1 cup unsweetened plant-based milk must be unsweetened!
- 2 tbsp lemon juice
- 3 tbsp nutritional yeast
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 - 1 tsp salt
- 1/2 tsp red pepper flakes
- 2 tbsp oil optional
- water for blending as much as needed for desired consistency
- vegan cheese shreds
- vegan bacon bits
- chopped bread and butter pickles
- mustard and ketchup
Cook the macaroni according to package directions.
While the pasta is cooking, in a large skillet over medium-high heat, saute the vegan meat substitute and chopped onions until browned. Use a bit of oil or just brown it without oil if using a nonstick pan.
Add the can of diced tomatoes and the salt and pepper to the meat substitute.
For the cheese sauce, use either homemade cooked potatoes and carrots or the canned versions.
Place the cheese sauce ingredients in a high-speed blender and process until smooth and creamy. Add a little oil, like olive oil, for a super creamy cheese. It's also just fine without.
Combine the cooked macaroni, the blended cheese sauce, the vegan meat, onion, and tomato mix and stir well. This can be transferred to a larger pot or bowl if needed.
Taste test and adjust seasonings.
Add vegan cheese shreds, if desired, and stir in.
Top with more cheese shreds, bac-o-bits, and chopped pickles. A tiny bit of mustard and ketchup on top was good, too.
An after-dinner sunset at the end of my road was a lovely dessert.
