This vegan sausage gravy is so easy to make. It’s creamy, spicy, and tasty just like the breakfast gravy you remember.
Vegan Breakfast Sausage Mix
This vegan sausage gravy recipe uses a vegan breakfast sausage mix that I posted the other day. The video is below and the full recipe is HERE.
The sausage mix isn’t that hard to make and uses fairly simple ingredients. For super fast results, use Minute brand Wild Rice with Quinoa. It can even be made ahead of time and saved in an airtight container in the fridge for a few days. It can also be either shaped into patties and placed between sheets of parchment paper and then wrapped in plastic wrap for freezing. For crumbles, just crumble it well and place in an airtight container and freeze for later use. Use from frozen. Don’t try to thaw it first.
Or Faux Meat Crumbles
If you don’t want to make the mix, just use two cups of your favorite vegan meat crumbles with the spices listed in the sausage mix recipe added.
OK, so you have your freshly made or frozen vegan breakfast sausage mix. Just crumble it up and fry in a little oil. I liked the cast iron for this recipe and so a bit of oil was necessary.
If you use nonstick pans or have another favorite way to cook without oil, then, by all means, use it here. These can actually be made oil-free if you use a nonstick skillet.
Once the sausage mix is nice and browned, add 2 cups unflavored, unsweetened plant-based milk. My favorite is So Delicious Coconut Milk, unsweetened. Heat it to a simmer.
While it’s heating up, make a slurry of a cup of cold water and a 1/4 cup flour. I used rice flour, but any flour will do here. Stir the flour into the water until it’s smooth and no lumps remain. Pour into the simmering mix and stir well, heating through and stirring constantly for about three minutes, until the gravy is thickened. Add more salt, black pepper, and red pepper flakes as desired.
Serve over biscuits or toast, or sausage and tofu scramble.
So delicious!
