Easy Maple Sweet Potato Soup Vegan Plant-Based Recipe
This vegan sweet potato soup is made even more delicious with a bit of maple syrup.
This soup is so healthy, so delicious, and so simple to make. It uses just a few ingredients and, once the sweet potatoes are baked, takes only a few minutes to whip up in the blender.
We went to a maple syrup farm today (post forthcoming) and bought some of the delicious products. It was a beautiful sunny day here, but only about 40 degrees. And we got stuck in the mud and had to be pulled out with a tractor (#veganadventures!). Anyway, when we got home I was chilly and just wanting something hot and simple.
I use sweet potatoes a lot. They’re so tasty and so healthy, too. It’s easy to bake several at the beginning of the week and then use them as needed.
Pre-cooked sweet potatoes work perfectly in dishes like this easy to make soup.
Maple syrup is a natural sweet complement to the sweet potatoes. It’s still a sweetener, and you can make this without it, but it’s a bit more healthy than ordinary sugar. And look how pretty it is!
These beautiful ambers are just natural variations in the syrup, depending on how long and hot it’s been cooked down.
At the end of a busy day, it was lovely.

Maple Sweet Potato Soup
This easy to make sweet potato soup is sweetened with just a bit of maple syrup. It's simple and oh so delicious.
Ingredients
- 3 medium sweet potatoes, baked
- 1 tbsp bouillon paste or powder
- 3 tbsp maple syrup
- 1 tsp powdered ginger
- salt to taste
- 1/2 tsp black pepper or to taste
- 3 cups water more or less for desired constistency
- 2 tbsp avocado or walnut oil optional
- red pepper flakes
Instructions

Rinse the sweet potatoes and place them on a baking sheet. Bake them at 420 degrees F for about an hour.

Add all ingredients to a high-speed blender and puree until very smooth.

Heat again to the desired temperature before serving.

Garnish with a drizzle of maple syrup, more black pepper, and some red pepper flakes, if desired.
