Meatloaf and mashed potato cupcakes combine two tasty comfort foods into one delicious, hand-held package. Amazingly, these are vegan and totally plant-based. They can even be easily made without any oil at all.
A huge cupcake of “meatloaf” just seemed too heavy so I made these into “meatloaf” cups that can hold a big dollop of mashed potatoes. Like a meat crust.
Easy Vegan Meat Substitute
To start, make one batch of my Easy Vegan Meat Substitute …
Then, just add a few more spices as listed in the recipe below …
Mix it all well. Then divide into 9 to 10 even balls. Using your hand, flatten them into rounds then press into the bottom and up the sides of a cupcake tin. Use a nonstick cupcake tin or place a circle of parchment paper in the bottom of the tin to prevent sticking.
Bake at 400 degrees F for about 15 minutes. They’ll come out looking like this:
Put a teaspoon or so of ketchup with a little BBQ sauce added into the center of the cupcake.
Then added a mound of mashed potatoes. I used these:

These easy vegan mashed potatoes are fluffy and delicious.
I used a plastic bag with a corner clipped off to pipe the mashed potatoes into the shells. That’s an easy way. Just shape it a little with a fork. Or just spoon the potatoes in and shape a bit.
Once in the shells, I added a little vegan butter (I use Earth Balance). But that’s totally optional. Some chives and a little flake salt finishes it nicely.
The meatloaf mix is oil-free and it’s easy to make the potatoes without oil as well.
When finished, they’re nice meatloafy shells with a tasty sauce and fluffy mashed potatoes. Easy to serve and can be eaten in hand like a cupcake.

- 3 tbsp tomato paste
- 1 tsp paprika
- 1 tsp mustard
- 1 tsp thyme
- 1 tbsp basil
- 1/4 cup ketchup
- 1/8 cup BBQ sauce
- 2 cups mashed potatoes
- chives optional
- vegan butter optional
Instructions
