How to Choose a Ripe Mango?
Like peaches, nectarines, and avocados, a perfectly ripe mango will yield slightly to pressure when squeezed gently. The color is not a good indicator of ripeness and they don’t reliably smell sweet. Squeeze.
How to Ripen and Store Mangos
Unripe mangos should not be refrigerated. It’s best to leave them out to ripen at room temperature. They’re better stored that way as well if you’re going to use them within a day or so. And who can resist a ripe mango longer than that?
Impatient? Place unripe mangos in a paper bag and leave at room temperature. They should ripen in a few days.
Mangos can be frozen to preserve their deliciousness for later. This is really helpful if you find them on sale. Just peel and cube the mangos and freeze in an airtight container for up to a few months. Use them in smoothies or in puddings like this. The texture will be mushy after freezing, but they’re still so good.

Mango Pudding
Ingredients
- 1 ripe mango cubed
- 1 ripe avocado
- 1 ripe banana
- stevia optional, to taste
- 1 tablespoon agave optional
- 1 tablespoon chopped cashews
Instructions

In a food processor with an "S" blade, process the avocado, one banana, half the mango, and agave until very smooth and creamy.

Top with sliced banana, the remaining cubed mango, and chopped cashews.

Drizzle with just a tiny bit of agave, if desired.
