It’s below freezing here … a lot below. -6 degrees F last I looked! After eating way too much garlic oil and hummus at La Marsa last night, we watched about 2 minutes of the lunar eclipse at 11:30 but were way too cold to wait to see the total eclipse at 11:41. Just Brrrr!
Today is also Martin Luther King, Jr Day. He wasn’t vegan/vegetarian, but his wife, Coretta Scott King, was vegan for the last 10 years of her life. Dr. King’s son, Dexter King, has been a vegan and animal rights activist since the 1980s.
There are so many good things in the world, like cold nights, good food, beautiful eclipses, and a warm home to get snuggly in. We have a long way to go, though, and much of what Dr. King wished to change still needs changing. I feel, at the heart of it, his message was that we should care about and take care of each other.
