I’ve been feeling SOOOO short on time lately. Summer flew by in a blink, fall is already well underway, and stores are putting up … wait for it … Christmas decorations! I need some healthy but fast food right now and these fit the bill perfectly. All of these delicious, vegan, and plant based recipes take a half hour or less from start to on the table.
Breakfast: Quick and Easy Avocado Toast from The Glowing Fridge
This is so pretty and goes together in minutes. I love avocado toast in general. It’s so yummy and fast. I like this one with added cukes and hemp seeds.
Lunch: Creamy Vegan Tomato Soup from Cadry’s Kitchen
Oh yes please. This looks so creamy and warm and it would go so well with a vegan grilled cheese! This soup looks fancy, but gets in the bowl in a mere half hour.
This looks so spicy and comforting and with the weather cooling down in these parts, I think it would be really warming.
Dessert: Chocolate Avocado Pudding with Cherries from Planted365
This is one of my favorite desserts and takes only a few minutes to put together. It’s creamy and chocolatey and cherries or any other fruit are a lovely addition.
