Watermelon Ice Cream Vegan Raw Food Plant Based Recipe
Just in time for the day after National Watermelon Day (I seriously need to find a food holiday calendar) … This delicious watermelon ice cream is a super easy, very cute way to stay cool, hydrated, and nourished this summer. It’s plenty sweet as is, but if you like it even sweeter a little stevia will do ya.
It’s just a coincidence that yesterday was National Watermelon Day and that I also made this today. Yesterday, I took my 6 yo grandson on a building supply shopping trip that lasted longer than I expected. We swung by a nearby Taco Bell … which has come a long way in serving vegans and plant based eaters. He wanted a watermelon slushie. When it came, it had seeds in it. I thought, “Oh wow, Taco Bell is awesome! They used real watermelon!”
Yes, I am that naive.
It wasn’t real watermelon. It was the usual fake color/corn syrup slushie with little candies shaped like watermelon seeds.
Don’t judge. The kid sat through two hours of flooring selection.
But he deserves better than that, so today I made real watermelon ice cream. Though the chocolate chips mean this, too, has candy seeds.
This is so easy … it’s basically n’ice cream with chocolate chips and takes all of a couple minutes to make if you have the frozen ingredients on hand. I always have frozen bananas and if I have extra watermelon (or anything else) I cut it up and freeze it as well. Most fruit will stay good for a few to several months wrapped well and stored in the freezer.
Watermelon Ice Cream
A delicious way to stay cool and hydrated this summer. Vegan, raw, and plant based, this only takes a few minutes and few simple ingredients to make.
- 1 banana, frozen
- 1 cup watermelon, frozen
- 1/2 cup plant milk soy, almond, coconut
- 2 tablespoons vegan chocolate chips
In a blender or food processor, puree the banana, watermelon, and plant milk until creamy and like stiff soft serve ice cream.
Serve in bowls (green works best!) and sprinkle with chocolate chips.
