Summer rain, much needed, have cooled things down around here … just a bit. We’re super busy with day job work, family fun and obligations, and getting ready for a Lake Michigan trip this coming weekend. We’ve had children coming and going, too, and needed super easy but also filling and delicious meals. These are all that and more, featuring all sorts of healthy ingredients, like turmeric, blueberries, quinoa, and sweet potato.
Breakfast: Golden Milk Chia Seed Pudding from From My Bowl
This chia pudding features the super healthy turmeric, which gives it a gorgeous golden color. Turmeric is known best as an powerful anti-inflammatory and the other spices turn this into a spicy and sweet treat. Add your favorite sweetener to taste, if desired. I prefer stevia but maple syrup would be awesome in this.
Lunch: Crispy Quinoa Cauliflower Burger from My Goodness Kitchen
I love this blog. It’s visually beautiful and the recipes look delicious. This quinoa cauliflower burger could be made the day before and rested in the fridge and then cooked up quick for lunch the next day.
