What a busy week this is going to be! We’re getting my current house ready to sell and making plans build another (awesome kitchen in the works), I’m working hard at my day job, writing here, doing a few art projects now and then (like the table below), trying to enjoy the summer and get some yoga/swimming/biking in, and … omg … my daughter is getting married this Saturday.
Whew.
I know it’s not just me and am sure you can relate. We all seem SOOOOO busy so far this summer. It’s just flying by. I know each year is supposed to go by faster and faster, but this is warp speed.
I feel overextended and am trying to do well at everything but am surely falling short here and there. And meals? Who wants to spend lots of time in the kitchen? Just give me the yummy yummy foods please. And make it fast. Thank you.

Breakfast: Strawberry & Peach Quinoa Breakfast Bowls

This looks so gorgeous and I love combining the cooked quinoa with fresh berries and fruit. So healthy. So yum. Cook the quinoa the night before and you could have this super deliciousness in your morning mouth in a matter of minutes, if you’ll pardon my alliteration.
Lunch: Mashed Chickpea and Avocado Sandwich

I could eat chickpeas (aka garbanzo beans) with avocado every day. Actually, I do, many days … and the combo is delicious and filling. I love how quick and simple it is, too.
Dinner: Creamy Vegan Pasta Sauce
