Radish Avocado Sandwich Quick Easy Vegan Plant Based Lunch

Vegan and plant based meals don’t have to be complicated. This is so simple I’m not going to even call it a recipe. It’s more of a loose but also delicious suggestion.  Raw radish and (vegan) butter sandwiches are a fave … but cooking the radishes takes the heat out and makes them mild. This radish avocado sandwich for lunch takes just a few minutes.

Radish Avocado Sandwich

More of a suggestion than an actual recipe, this is a super easy lunch that uses common ingredients.

Ingredients

  • 1 cup sliced radishes
  • 1 ripe avocadp
  • 1 tbsp sliced red onion
  • vegan mayo
  • drizzle of maple syrup

Instructions

  1. Saute the sliced radishes until slightly browned and tender. Use a little oil for cooking or water. 

  2. Slice the avocado and onions and arrange the cooked radishes, avocado, and onions on bread or toast. Top with mayo and, if desired, a drizzle of maple syrup.
