Vegan Roasted Garlic Hummus Recipe

I can eat my weight in hummus. Daily.  This Vegan Garlic Hummus Recipe makes that easy. Which is good. And not good. Anyway, body image conflicts aside, if you like to eat a boatload of tasty hummus, too, this is the recipe for you.

 

The first order of business is roasting the garlic. Garlic can be pretty bitter when raw but something magical happens when it’s roasted. It’s still garlicky, but so very mild and buttery. I roast whole heads of garlic at a time, too. Here’s a link to my post How To Roast Garlic.

Vegan Roasted Garlic Hummus Recipe

Total Time 15 minutes

Ingredients

  • 1 15 ounce can garbanzo beans or 2 cups cooked
  • 1/4 cup lemon juice
  • 1 teaspoon cumin
  • 1 tablespoon onion powder
  • 1/4 cup tahini
  • 2 tablespoons olive oil optional, omit for lower fat content
  • 10-15 cloves roasted garlic

Instructions

  1. Drain most of the liquid from the beans and pour into a high speed blender or food processor.
  2. Add the lemon juice, cumin, onion powder, tahini, olive oil, and roasted garlic and blend until very smooth and creamy ... about a minute or so.
  3. Serve with veggies or crackers.
  4. Store in an airtight container in the refrigerator for about three days.

 

Yeah, it’s that easy.
