It’s below freezing here … a lot below. -6 degrees F last I looked! After eating way too much garlic oil and hummus at La Marsa last night, we watched about 2 minutes of the lunar eclipse at 11:30 but were way too cold to wait to see the total eclipse at 11:41. Just Brrrr!
Today is also Martin Luther King, Jr Day. He wasn’t vegan/vegetarian, but his wife, Coretta Scott King, was vegan for the last 10 years of her life. Dr. King’s son, Dexter King, has been a vegan and animal rights activist since the 1980s.
There are so many good things in the world, like cold nights, good food, beautiful eclipses, and a warm home to get snuggly in. We have a long way to go, though, and much of what Dr. King wished to change still needs changing. I feel, at the heart of it, his message was that we should care about and take care of each other. These are recipes that will warm and nourish even on the coldest night and can, and should, be shared with anyone.
